Tarragon is a fresh herb with a slight anise flavor and it is one of the components of the french fine herbs,  commonly used in this country. It is recommended for the flavoring of dishes with poultry,  fish and eggs.

Specifically, tarragon is one of the main ingredients of the traditional Bernaise sauce. It is also commonly used for flavoring butter, mayonnaise and vinegar.
